What is Dill?

Dill is native to the Mediterranean region and its history goes way back to ancient times. It is mentioned in Egyptian inscriptions where it goes by the name of `ammisi'. The Greeks and Romans, who spread it as far as the northern Alps during their campaigns, called it `anethon' from which is derived the botanical name.

They are frost-resistant and their leaves may be snipped the whole year long without affecting the plants in any way. However, they should be fed frequently and should not be cut too close to the ground so as to avoid damaging the growth centres. Chives may be propagated from seed, but home-growers usually increase them by splitting up older clumps and replanting the offsets, which gives earlier yields. The only requirement is plenty of light.

Chives should be freshly cut before serving. They have a very mild onion flavour without the biting quality and are used not only as a herb but also as a garnish on many cold and hot dishes. They should never be cooked - when used as a garnish for hot dishes chives should be sprinkled on top just before serving.

They are popular in cheese spreads, on bread and butter, in scrambled eggs, salad dressings and cold sauces, sprinkled on buttered boiled potatoes and as a garnish for assorted cold meat platters. In winter they arc a welcome source of Vitamin C.

In order to have fresh dill in the garden the whole year round it should be sown in succession from March till late July. The leaves will be ready for picking within six weeks of sowing. Dill is an annual herb and plants sown in spring produce seeds in the autumn of the same year.

Until recently the housewife used either fresh or dry garlic bulbs, but nowadays, thanks to modern methods of dehydration, it can he obtained in shops in the form of dry pieces, flakes, grains or powder, all of equally good.

Growing Fig Tree in Your Garden

There is no doubt that most people are too kind to figs and thus they don't crop. They have been grown successfully in Great Britain since the time of Henry VIII. There are signs that the Romans may have brought the fig with them hundreds of years before.

Morello cherries are usually budded, though there is a variety in Kent known as the Wye Morello that grows well on its own roots.

As the short growths made each year are those that bear the fruits, the only pruning done should be a cutting back hard to form new branches as replacements. Figs seem to have wood buds almost anywhere on their branches and so one can prune to almost any point. For the first five or six years little pruning is necessary, but once quite big trees have been formed, about 25 per cent of the wood should be removed each November, this being done by cutting down one quite large branch almost to its base. This I find it gives better results than cutting out a number of widely distributed branches.

The method of training is, of course, on the fan system, and wires are therefore provided at 18 inches apart so that the branches may be tied in. It is easy fe,x a fig to cover a wall space of about 35 feet on a wall 15 feet high. Such a tree, of course, bears prodigiously. But even young trees four years of age will bear twenty to twenty- five fruits if they are happy.

Pruning is indeed a very difficult job because, as has already been said, the fruit is borne on the length of thin young wood which grew during the previous season. On a fan-trained tree, therefore, one has to be constantly cutting away the older wood and tying in the new wood. With bush trees, it is advisable to cut back some of the older branches each season the moment the leaves have fallen, and then, if there are any young growths in the centre of the bush, these will have to be cut back in February, the pruning cut being made just above a pointed single shoot bud. It is the double buds that are the fruit buds.

It is not advisable to grass a fig down but it is equally important to allow no cropping or cultivation within 12 feet of their sterns, for such cultivations will only encourage strong growth. It does pay, therefore, to mulch the soil in a half-circle around the trees and a fine sedge peat may be put on an inch deep. The alternative is to grow the fig in a corner where the soil can be well trodden down and not disturbed at all.

What is Garlic?

If we were given a choice of growing only one species from the large genus Alliurn the decision would be very difficult, but many persons would doubtless choose chives. Chives can be easily grown, not only in the garden but also in a windowbox or in a pot on the window sill.

In the year 812 Charlemagne, aware of its culinary and medicinal properties (the essential oil it contains is still used to relieve flatulence), ordered that it be grown on his estates. It was believed to silence rumblings in the stomach, stop hiccups, and prevent the formation of intestinal gas; burnt seeds if placed on a wound were said to promote rapid healing. Nowadays dill is naturalized and grown not only throughout Europe but also in America and the West Indies.

All the upper parts of the plant are aromatic, but it is the tender feathery leaves that have the most delicate aroma and pleasantly sour flavour. The fruits and the entire, unopened flower heads are also used as flavouring, especially for pickling gherkins, cabbage and onions.

The bulb is made up of large segments called cloves (1) encased in a cover of scales ranging in colour from white to red. Unlike the common onion, the bulb of garlic is not made up of layers and the leaves are not hollow and tubular but flat.

The flowers are arranged in loose umbels and are followed by small bulbs. Garlic is a perennial herb propagated by planting the separate cloves directly in the ground where they are to grow, either in autumn or early spring. Bulbs are dug up and harvested when the foliage begins to turn yellow and dry. A very suitable and decorative method of storing garlic is to braid the bulbs together and hang them up in a cool spot.

Dill may be stored for the winter by chopping the leaves and preserving them in salt or vinegar. It may also be dried, but this must be done rapidly and with care in an airy place at a temperature of not more than 30C (86F), otherwise the aromatic and extremely volatile essential oil will rapidly vaporize. This is also the reason why dill should be added to hot food just before serving. The dried herb should be stored in air-tight containers.

There are many varieties of lettuce worth growing and a few outdoor tomato plants in a sheltered place can be rewarding. Fruit bushes can be trained along a fence or grown against a wall, where they will benefit from the heat retained and gently released by the wall.

If possible, allow enough room not only to get out of the car without landing in a rose bed, but also to wash the car down; do not forget provision for a water point and for drainage. If there is not room to turn the car round, you will need to leave clear lines of vision for reversing out.

The Goblet System of Growing Grapes

There are those who have tried out the Labruscan varieties from Ontario. These cannot be grown under Guyot pruning methods but must be cultivated by a simpler system such as one main rod plus six strong side growths, which are pruned back hard each January.

They could also be grown on the 'Grow as you like' system, being allowed to scramble over a trellis or cover a fence or wall. Under this system very little pruning is necessary, though it does pay to cut back the fruiting laterals in the summer at two leaves above a bunch.

The leaves of the vines grown against walls are often attacked by Red Spiders, and the answer here is to syringe the under surface of the foliage in the evening, twice a week, from the beginning of June onwards. In cases of bad attack some liquid derris should be added to the water.

Do not, however, allow 12 rods to be produced or you may not be able to ripen the fruit. Stick to 6 or 7 rods tied to strong bamboos or stakes to form a goblet and gradually these shoots will bear more bunches of grapes up to, say, 8 per rod. Do not be tempted to reduce the pruning by cutting say to 5 buds, and do not be tempted either to try and make the vine crop more heavily.

Each of these laterals is allowed to bear one bunch of fruit this season. Being a large city, it is quite easy to find good things to buy, good food to eat, and good places to visit. Texans would claim Houston is a good city, and the number of tourist spots in the area would keep anyone entertained for as long as their visit would allow them to.

For the naturally curious, their is the Houston Museum of Natural Science, an altar for the different branches of science. The museum has a butterfly center, a planetarium with stars and the usual revolving satellites, models of dinosaurs and much more.

There's also the Museum of Fine Arts, which holds a very large and expensive collection of art pieces, most from around the world. Renaissance, tribal art, expressionist, abstract and even the pre-Dark ages. It also hosts art from its visitors, students from the surrounding art schools or rising artists, whose works may one day take the art world by storm.

We have the Houston Downtown aquarium, a 7-something acre complex that has renditions of famous waterways like the Amazon River, Louisiana swamp and others. There is also a Ferris wheel inside, a helipad (makes me wonder what this is for) and a train tunnel that passes underneath a shark tank. Feel the thrill having a shark swim above you in menacing circles!

The Houston Zoo is a huge crowd drawer that has a collection of 4,500 animals, ranging from mammals, birds, felines, reptiles (alligators, anyone?). The zoo is also well known for having reared the largest elephant calf in all of the recognized zoos around the country. It is also probably the only zoo that hosts the Giant Eland, a rare specie of savanna antelopes. Believe me, being near this great-horned being is a wonderful experience that cannot be emulated by anything else.
